How to Flame an Orange Peel

Few things are as captivating to bar guests as an open flame, bursting forth in front of their very eyes. But the use of fire can be more than just a source of entertainment: it can also add an aromatic element to your cocktail experience. Flaming an orange peel caramelizes the oil expressed from an orange peel, and it contributes a subtle smokiness when used to rim the cocktail glass.
